Peripheral - Natural beer, wine, & cider festival

Join us for this wild fermentation festival with natural wine, beer, ciders, and more, taking place in the Hudson Valley this October.
Peripheral, now in its 4th year connecting an ever-expanding community of industry professionals and curious consumers in eastern Upstate New York, and Wild World, the groundbreaking festival you may have heard whispers of from Texas this past spring, will partner to bring you an extended New York weekend of tastings and idea-sharing around all beverages wild-fermented!

_______

Peripheral, taking place in Hudson, NY, on Saturday, October 26th, and Wild World, taking place in Manhattan on Monday, October 28th, will both bring together top-notch producers of natural wine and wild-fermented beers, ciders, and meads to debunk myths and break down the barriers that have long divided fermented beverage communities with rich histories of experience, enjoyment, and experimentation.

Each fair will include a salon-style tasting and lively panel discussions centering on organic farming, wild fermentation, and getting people, whatever their pre-existing beverage preferences may be, to drink more like we do.

Grand Opening Party

It is official! Our tasting room is now open to the public and we want to celebrate!
Music, food and beer on the farm. How better to break in the new space than with friends and family from the neighborhood??

The right fit for our ground-to-glass beers is Farmers & Chefs farm to table foods!

Poughkeepsie's own food truck from Farmers & Chefs will be present for the event!! Owner & founder John Lekic explains, “We believe in preservation of boutique agriculture and we support our small farms while emphasizing that two same ingredients are not always equal to each other. How are things done and grown at the farm matters.” Embracing philosophy of less is more which means cleaner food with less chemicals, pesticides, and fillers.

Music provided by our own Evan Watson, performing with Robbie Gil and Rebecca Haviland! For more information about the musicians, see below:

Beer Street Beer Event

12:00 PM12:00

Beer Street Beer Event

We will be at Beer Street in Brooklyn, NY for Craft Beer week starting at 12noon pouring some of our favorite styles! Here are a few things on the menu:

Autumn: our heritage corn (Bloodly Butcher, Dent Yellow, Ohio Blue), our farm grown organic pumpkins and our coriander aged in freshly dumped Hillrock bourbon barrels. Amber in color, easy drinking, mildly tart.

Barn Beer: 100% NYS ingredients: 6-row organic barley from Stone House Farms and malted at Germantown Beer Farm (Germantown, NY), hopped with Perle, Cascade & Nugget from Gro-Moore Farms in Henrietta, NY and fermented with a wild yeast culture from our raw honey and honey comb from our bees on the farm in Poughkeepsie, NY. Coolship cooled and fermented in open HV white oak. Juicy & satisfying, dances btw fruity&funky yeast, lemon/pine hop notes. Subtly tart, soft, & lemony.

Pitz: Juicy, Tangy, & Tart- NY Wild Ale coolship cooled, & aged in oak with whole peaches and their pits. Flavors of strong peach candy & Meyer lemons. Slight Funk and Pretty Sour.

Tulsi Blue: Our extra fruited series comes in our 375mL bottles with pastel colored labels ornate with a golden bee. Wild ale aged in oak on blueberries and holy basil, fruity, tart and sweet basil notes

Zone 6: barrel aged wild ale with whole quince fruit and black currants, tropical fruit notes, tart with bright citrus finish

Comb: Our annual barrel blend from our cellar w/ a blend of barrels that were all brewed in 2017 - including wine barrels, neutral oak barrel & whiskey barrels. Layers of complexity, this one ages in the bottle well as the beers marry together.

Savage: 2 years of Wild Berry Harvest exclusively from our farm (wild blackberry, wild raspberries & wine berries). 18 months aged in a single Puncheon. A demonstration of subtlety and complexity . This one is special folks.

Reincarnation: a blend of juice&whole sour cherries from Bittner-Singer Orchards, aged in red wine barrels, over 1000# of cherry, by far the most fruited beer we have ever done!

Bouquet: barrel aged wild ales on edible flowers grown or foraged from the farm, delicious, light and floral. We will be bringing down one with our wild violets and another with anise hyssop.

Abominable Snowfest

"The Abominable Snowfest is the local beerfest. At Defiant, we truly believe that an enormous part of the enjoyment of beer is the companionship that it brings and friendship it sparks. With craft beer exploding in popularity, so has the beerfest industry. We are bringing it back to the brewery. This fest is designed to show the community that there are incredible breweries all within a short run/walk/bike/swim/drive. Along with this, it allows us as brewers to have an excuse to all hang out with each other and the amazing customers who support our brand. Spend your hard earned beer cash on products created by your neighbors. This is the heart of TASF. All breweries involved are from the Hudson Valley, the five boroughs of NYC, or North NJ.

Along with an incredible selection of craft beer, all food is included. Defiant has a fully operational Smokehouse restaurant, and the Smokehouse team will be cranking out all you can eat bbq specials during the entire fest. Stay Tuned for updates on menu items for the fest.

Lastly, we love music. So we make sure that the entertainment never stops during TASF. Stay tuned for the lineup this year."

Included in Standard Ticket Price: Custom tasting glass, Access to all samples poured by breweries, all you can eat bbq, & live music.

VIP Ticket Includes: All of the above plus....Admission to fest from 12-5pm, VIP Hour Special beers from 15 breweries.
